Sous Chef  is the direct assistant of the executive chef and second in command in the kitchen. They may be responsible for scheduling, and filling in for the executive chef when they are off-duty, and will also normally fill in for or assist the chef de partie (line cooks) when needed.

Larger operations may have multiple sous chefs, whilst smaller operations may not have any.
